Here’s something that cracks me up: recipes professed as being “quick & easy” that take over an hour to prepare.

In my house, an hour of dinner prep does not equal a quick meal. If you make these wraps with frozen pre-cooked chicken then this meal can be on your table in under 15 minutes. Now that qualifies as a quick and easy dinner to me!

I actually make these Chicken Wraps on a pretty regular basis because they are so easy, healthy and yummy. The honey mustard sauce is key and contains just two ingredients – you guessed it, honey and mustard.

I start by adding sliced chicken tenders to a burrito-size tortilla. I made these baked chicken tenders but I usually buy frozen chicken and heat it up in the microwave when I know I’ll be short on time.

Then I pile on the veggies, usually diced fresh tomato, sliced avocado and spinach or lettuce.

I top it with grated cheese, in this case, Monterey Jack. Sometimes I add diced bacon pieces which my husband totally loves.

To make the sauce, I add roughly 2 parts honey and 1 part Dijon mustard to a small bowl, microwave it for 30 seconds, and stir until combined. It’s kind of embarrassingly easy.

I often serve the wraps with sweet potato fries, which I know some folks love and some hate. We love them, especially my two-year old daughter! Curly sweet potato fries are extra fun.

I also like these wraps because I often have all of these ingredients on hand, even if I’m not planning on making this dish. So its easy to throw together for an unplanned lunch. 

Here is the recipe, which is really more like assembly instructions because there isn’t much technique involved. But that doesn’t make them any less delicious!


Chicken Wraps with Honey Mustard Sauce

Serves 4

Ingredients

12 ounces breaded chicken tenders (either homemade or frozen & pre-cooked)
4 large tortillas
1 avocado, sliced
1 large or 2 small tomatoes, diced
4 ounces fresh spinach or lettuce
4 ounces shredded Monterey Jack or other cheese
Honey
Dijon mustard
Bacon, cooked and chopped (optional)

Directions

To prepare the sauce, place roughly two parts honey to one part mustard in a small glass bowl. Microwave for 30 seconds and stir to combine. Slice chicken tenders and place them on the tortillas. Top with veggies and cheese, and drizzle honey mustard sauce on top. Enjoy!
