Our garden is winding down, not because the growing season has ended here but because I have let it go completely wild. I usually lose my enthusiasm for gardening sometime in late August, and this year is no exception. At some point I just give in and let the weeds win (they grow with amazing speed in our kinda-tropical climate).
But I did manage to freeze a bunch of recipe-ready butternut squash and pears this week. I love being able to grab some of our summer harvest from our freezer in mid-winter. And I still have fresh butternut squash, tomatoes and peppers for my recipes this week! Here is what we are eating:
Kielbasa, Onion, Pepper and Potato Hash – The Two Bite Club
Butternut Squash and Black Bean Chili – The Simple Veganista (Thanks for the Pin, Jenny @ Dishwasher Required!)
One-Pot Red Beans and Rice – Southern Bite
