This month I am trying to find extra money in our budget to pad the Christmas fund. I was able to put $20 in the fund last week just because I came in under budget on our groceries. So I have been on the lookout for healthy, low-cost meals for this week to hopefully add some more cash to Santa’s stash!
I got a great deal on some thinly sliced beef labeled “Carne Picada” at the grocery store, then got home and started to wonder what to do with it! Here’s what I learned from my web searching… it turns out that Carne Picada just means that the beef is sliced into super thin strips and it isn’t specific to any recipe (please someone correct me if I’m wrong about this!) So I am using it for some Easy Pepper Steak this week and stashing some in the freezer for Philly Cheesesteak Subs next week!
You can find all of my previous weekly meal plans here if you are looking for some recipe inspiration. Here’s what I’m making this week:
Cheesy Bacon and Garlic Butter Smashed Potatoes – Mel’s Kitchen Cafe
Spanish Chickpeas and Rice – Budget Bytes
Croque Monsieur with Poached Eggs – Alexandra’s Kitchen
Best Marinade for Chicken & Steak – The Frugal South
Crockpot Chicken Noodle Soup – Fresh Family Meals
Easy Pepper Steak with Rice – Gimme Some Oven
