I love it when I can go “shopping” in my garden before I plan my meals for the week!
We are getting a regular supply of tomatoes and peppers right now and our green beans are just starting to come in.
I also harvested our first butternut squash and want to try it in a pasta dish. Yum. I’m making use of two huge bags of peppers and onions that I froze a few months ago after my first trip to Costco (I tested out this tip for shopping at Costco without a membership and it definitely works).

Plus you can find these and many other recipes on The Frugal South’s Pinterest page. Here are some recipes for this week:
Creamy Tortellini Vegetable Bake – Chelsea’s Messy Apron (I’m doubling the recipe and taking some to friends who just had a baby!)
Tex-Mex Migas – The Lean Green Bean
Stuffed Peppers with Rice, Ground Beef and Chickpeas – The Mediterranean Dish
Buffalo Chicken Tacos – Gimme Some Oven
Pasta with Butternut Squash, Spinach and Proscuitto – The Parsley Thief (likely making this with bacon instead)
