Here is my meal plan for this week with some tried-and-true recipes as well as a few that are new to me. I tried to incorporate several items that are on sale this week at my local Food Lion since that is my next step in this meal planning experiment. Wednesday’s Pizza + Salad dinner = Mama Needs a Break!

Cast Iron Skillet Enchiladas – The $5 Dinner Mom (I am using ground venison and have made this several times before)
Chinese Orange Chicken – Damn Delicious
Sausage, Spinach, Pepper and Potato Frittata – Onion Rings and Things
Southwestern Quinoa and Black Bean Casserole – A Pinch of Yum
