I’m revisiting some favorites from last year in this week’s meal plan (Croque Monsieur, Beef Empanadillas, and a yummy vegetarian Indian dinner) as well as trying out some new budget-friendly dishes. I plan on making a huge batch of chicken tenders and freezing them for a quick lunch or dinner main course.
Have you ever felt like you ran out of everything at once in your pantry? Wow, did I have that experience this week. My shopping list is full of basics so I doubt I’ll stay much under-budget this week. But overall I’m on track for staying under $400 for the month. Anyone else trying to stick to a new grocery budget for 2016? I’d love some encouragement so please leave a comment below!
Here’s what I’m making this week:
Best Darn Chicken Tenders – Just A Pinch
Garlic Parmesan Broccoli in Foil – Damn Delicious
Beef Empanadillas – The Latina Homemaker
Slow Cooker Chana Masala – Kitchen Treaty
