Weekly Meal Plan 10/4/15 with lots of yummy fall recipes

Well we are home from vacation and it seems that fall has arrived here in North Carolina. Now I’m craving everything comforting and fall – pumpkin, butternut squash, cranberries, apples, you name it. I found a bunch of new recipes to try this week, including the famous Cheddar Cheese Soup that we devoured at the Food & Wine Festival last week. Here’s what I’m making:

One Pot Spanish Chicken and Potatoes – A Pinch of Yum

Canadian Cheddar Cheese Soup – Epcot’s Le Cellier

Cheesy Chicken Bacon Ranch Pasta – Flavor Mosaic (I am omitting the “ranch” because I just don’t like it)

Butternut Squash, Crispy Kale and Fontina Pizza – Half Baked Harvest (Will simplify and make liberal changes to this recipe)

Pulled Pork Sliders – Blog Chef

Cranberry Apple Coleslaw – Sweet Little Bluebird

Mexican Posole (Pork Soup with Hominy) – Southern Boy Dishes
