We are up to our ears in eggs right now. It is amazing how quickly eggs accumulate when your chickens are laying 6-8 eggs each day! My goal was to incorporate eggs into three of my dinner recipes this week. Side note – If you’ve never made a frittata or quiche with chorizo, please put this on your to-do list immediately.

I am also currently reaching peak pumpkin frenzy. I want to eat it every day. I am trying to control myself but I do have plans for a pumpkin pie (it uses 2 eggs!) and one other pumpkin treat (maybe this Pumpkin Praline Bread Pudding? or these Pumpkin Pecan Cheesecake Bars?) Pumpkin frenzy sometimes doesn’t resolve itself until Thanksgiving. I apologize in advance if I overload you with pumpkin recipes, I really can’t help myself.
